Ingredients

  • 1.25 – 1.75 dl (½ to ¾ cup) walnuts, soaked overnight
  • 5 dl (2 cups) oyster mushrooms, cleaned and finely chopped
  • 2.5 dl (1 cup) rolled oats
  • 1.25 dl (½ cup) diced yellow onion
  • 0.75 dl (3 tablespoons) milled flaxseeds
  • 1 dl (4 tablespoons) nutritional yeast
  • 3 dl (1¼ cups) cooked red lentils
  • 3-4 garlic cloves, minced
  • 0.25 dl (1 tablespoon) tomato paste
  • 0.25 dl (1 tablespoon) coconut aminos (or soy sauce)
  • 0.25 dl (1 teaspoon) liquid smoke
  • 0.25 dl (1 tablespoon) maple syrup

Seasoning Blend

  • 0.25 dl (1 teaspoon) onion powder
  • 0.25 dl (1 teaspoon) garlic powder
  • 0.25 dl (1 teaspoon) cumin
  • 0.25 dl (1 tablespoon) fennel seeds
  • 0.25 dl (1 tablespoon) ground sage
  • 0.25 dl (1 teaspoon) salt
  • 0.12 dl (½ teaspoon) black pepper

Instructions

  1. Prepare Walnuts: Soak the walnuts overnight in water. Drain and rinse before use.
  2. Cook the Red Lentils: Rinse 1.5 dl (¾ cup) of dried red lentils under cold water. Add them to a pot with 5 dl (2 cups) of water. Bring to a boil, then reduce the heat and simmer for about 10-15 minutes, until the lentils are soft but not mushy. Drain any excess water and set the lentils aside to cool.
  3. Prepare the Oyster Mushrooms: Clean the oyster mushrooms by gently wiping them with a damp cloth or rinsing them briefly under cold water. Pat them dry with a paper towel. Finely chop the mushrooms into small pieces to ensure they blend well into the sausage patties.
  4. Preheat Oven: Preheat the oven to 175°C (350°F).
  5. Combine Seasonings: In a small bowl, mix together the onion powder, garlic powder, cumin, fennel seeds, ground sage, salt, and black pepper. Set aside.
  6. Blend Ingredients in Food Processor: In a food processor, combine the soaked walnuts, finely chopped oyster mushrooms, rolled oats, diced onion, milled flaxseeds, nutritional yeast, cooked lentils, minced garlic, tomato paste, liquid smoke, coconut aminos, and maple syrup. Pulse the mixture in short bursts until it is well combined but still retains some texture. Be careful not to over-process, as you want the mixture to have a slightly coarse consistency.
  7. Form Patties: Shape the mixture into 10-12 patties and place them on a greased baking sheet.
  8. Bake: Bake in the preheated oven for 25 minutes, flipping the patties halfway through to ensure even cooking.
