Or store bought plant milk of choice - 1/2 cup light brown sugar
- 1/4 cup agave syrup
- 2 tbsp melted vegan butter
- 1/4 cup chopped cacao butter
*Alternative to Cacao Butter use 1/4 cup of refined coconut oil
*** Healthy Alternative is to replace this oil with 1/4 cup almond butter - 2 tbsp coconut oil
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/2 cup chopped walnuts
Instructions:
- Soak Cashews: Place cashews in a bowl, cover with boiling water, and let soak for 1 hour. Drain and blend with fresh water until creamy.
- Roast Bananas: Toss banana slices with melted vegan butter, light brown sugar, and salt. Spread on a parchment-lined baking tray and bake at 400°F (200°C) for 40 minutes until caramelized.
- Prepare Milk Base: Mix cashew milk and coconut milk in a bowl.
- Melt Ingredients: In a saucepan, melt agave syrup with water, stirring constantly. Add chopped cacao butter, coconut oil, salt, and vanilla extract, whisking until smooth.
- Combine: Pour the melted mixture into the milk base. Add roasted bananas and blend until smooth.
- Chill: Place the mixture in the freezer for 15-20 minutes until chilled, stirring occasionally.
Churning Instructions:
- Using an Ice Cream Machine: Churn the mixture in an ice cream machine until it reaches a soft-serve consistency. Add chopped walnuts in the last minute.
- Using a Food Processor: Pour the chilled mixture into a food processor and blend until smooth. Transfer to a loaf pan, cover, and freeze for 1-2 hours. Blend again in the food processor to break up ice crystals, then freeze until set.
- Using a Kitchen Mixer: Pour the chilled mixture into a bowl and beat with a kitchen mixer on high speed until it becomes fluffy. Transfer to a loaf pan, cover, and freeze for 1-2 hours. Beat again with the mixer to break up ice crystals, then freeze until set.
