Vegan Lentil Bread Recipe (for 2 Loaves)
Prep Time: 15 minutes
Cook Time: 45 minutes
Total Time: 1 hour
Yield: 2 loaves
Ingredients:
- 4 dl (2 cups) dried red lentils
- 9.6 dl (4 cups) water
- 7.2 dl (3 cups) whole wheat flour
- 2.4 dl (1 cup) almond flour
- 1.2 dl (1/2 cup) olive oil
- 1.2 dl (1/2 cup) maple syrup
- 0.8 dl (4 tablespoons) ground flaxseeds
- 1.2 dl (1/2 cup) warm water
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons salt
- 2 teaspoons dried thyme (optional)
- 2 teaspoons dried rosemary (optional)
Instructions:
- Prepare the Lentils:
Rinse the red lentils under cold water until the water runs clear. In a medium saucepan, combine the lentils and 9.6 dl (4 cups) of water. Bring to a boil, then reduce the heat and simmer for about 15-20 minutes, or until the lentils are soft and the water is absorbed. Let the lentils cool slightly. - Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease two loaf pans or line them with parchment paper. - Prepare the Flax Egg:
In a small bowl, combine the ground flaxseeds with 1.2 dl (1/2 cup) of warm water. Stir and let sit for about 5 minutes to thicken. - Blend the Lentils:
In a food processor or blender, combine the cooked lentils, olive oil, and maple syrup. Blend until smooth. - Mix the Dry Ingredients:
In a large mixing bowl, whisk together the whole wheat flour, almond flour, baking powder, baking soda, salt, dried thyme, and dried rosemary (if using). - Combine Wet and Dry Ingredients:
Pour the lentil mixture and the flax egg into the bowl with the dry ingredients. Mix until well combined. The dough will be thick and sticky. - Bake:
Divide the dough evenly between the two prepared loaf pans. Smooth the tops with a spatula. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean. - Cool and Serve:
Allow the bread to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely. Slice and serve as desired.
Tips:
- You can customize the flavor with your favorite herbs or spices.
- Store the bread in an airtight container at room temperature for up to 3 days, or freeze slices for longer storage.
