Recipe

  • 1 can young green jackfruit in water or brine, drained and shredded (20 oz / 565 g)
  • 2 tablespoons sesame oil (2 tbsp / 30 ml)
  • 1/4 cup soy sauce or tamari (1/4 cup / 60 ml)
  • 2 tablespoons maple syrup (2 tbsp / 30 ml)
  • 1 tablespoon rice vinegar (1 tbsp / 15 ml)
  • 1 tablespoon sriracha or other hot sauce (1 tbsp / 15 ml)
  • 1 teaspoon grated fresh ginger (1 tsp / 5 g)
  • 2 cloves garlic, minced (2 cloves / 6 g)
  • 1 ripe mango, peeled and diced (1 mango / 200 g)
  • 1/4 cup chopped fresh cilantro (1/4 cup / 15 g)
  • 8 small slider buns or whole grain mini buns (8 buns / 8 buns)
  • Optional: sliced jalapeños for extra heat (to taste / to taste)

Instructions

  1. Drain and rinse the jackfruit. Shred the pieces with your hands or forks to create a pulled texture.
  2. Heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
  3. Add shredded jackfruit to the skillet and cook for 5 minutes, stirring occasionally.
  4. In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, and sriracha.
  5. Pour the sauce over the jackfruit and stir well to coat. Cook for another 10-12 minutes, allowing the jackfruit to absorb the flavors and slightly caramelize.
  6. Remove from heat and stir in diced mango and chopped cilantro.
  7. Toast the slider buns lightly.
  8. Spoon the spicy sesame pulled jackfruit mixture onto each bun. Add sliced jalapeños if desired for extra heat.
