Recipe
- 1 can young green jackfruit in water or brine, drained and shredded (20 oz / 565 g)
- 2 tablespoons sesame oil (2 tbsp / 30 ml)
- 1/4 cup soy sauce or tamari (1/4 cup / 60 ml)
- 2 tablespoons maple syrup (2 tbsp / 30 ml)
- 1 tablespoon rice vinegar (1 tbsp / 15 ml)
- 1 tablespoon sriracha or other hot sauce (1 tbsp / 15 ml)
- 1 teaspoon grated fresh ginger (1 tsp / 5 g)
- 2 cloves garlic, minced (2 cloves / 6 g)
- 1 ripe mango, peeled and diced (1 mango / 200 g)
- 1/4 cup chopped fresh cilantro (1/4 cup / 15 g)
- 8 small slider buns or whole grain mini buns (8 buns / 8 buns)
- Optional: sliced jalapeños for extra heat (to taste / to taste)

Instructions
- Drain and rinse the jackfruit. Shred the pieces with your hands or forks to create a pulled texture.
- Heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
- Add shredded jackfruit to the skillet and cook for 5 minutes, stirring occasionally.
- In a small bowl, whisk together soy sauce, maple syrup, rice vinegar, and sriracha.
- Pour the sauce over the jackfruit and stir well to coat. Cook for another 10-12 minutes, allowing the jackfruit to absorb the flavors and slightly caramelize.
- Remove from heat and stir in diced mango and chopped cilantro.
- Toast the slider buns lightly.
- Spoon the spicy sesame pulled jackfruit mixture onto each bun. Add sliced jalapeños if desired for extra heat.
