Blender Ketchup Recipe (Oil and Sugar-Free)
Ingredients:
- 1 can (400g) of whole peeled organic tomatoes (or 4-5 fresh organic tomatoes, blanched and peeled)
- 1/4 cup organic apple cider vinegar
- 1/4 cup water
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 tablespoon date syrup (or 2-3 pitted dates, soaked in warm water)
- ** alternative “Agave Syrup”
- 1 teaspoon salt
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground mustard
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- 1/4 teaspoon black pepper
Instructions:
- Prepare Ingredients: If using fresh tomatoes, blanch them in boiling water for 1-2 minutes, then transfer to an ice bath and peel. If using canned tomatoes, drain them.
- Blend: Add all the ingredients to a high-speed blender.
- Blend Until Smooth: Blend on high until the mixture is completely smooth.
- Cook: Pour the blended mixture into a saucepan and bring to a simmer over medium heat. Reduce the heat to low and let it simmer for about 20-30 minutes, stirring occasionally, until it thickens to your desired consistency.
- Cool and Store: Let the ketchup cool completely before transferring it to a glass jar or bottle. Store in the refrigerator for up to 2 weeks.
