Gluten-Free Spinach Tortillas Recipe

Ingredients:

  • 2 cups fresh spinach (approx. 475 ml)
  • ½ cup almond flour (approx. 120 ml)
  • 5 tablespoons lemon juice (approx. 75 ml)
  • 2½ cups gluten-free flour blend (approx. 600 ml)
  • ¾ teaspoon sea salt (approx. 3.75 ml)
  • 1 teaspoon regular or sodium-free baking powder (approx. 5 ml)
  • ½ cup gluten-free flour, for dusting (approx. 120 ml)

Instructions:

  1. Prepare the Dough:
    • In a food processor, combine the fresh spinach, almond flour, 2 tablespoons (30 ml) of lemon juice, and ¾ cup (180 ml) of water. Process until the mixture is creamy.
    • Add the gluten-free flour blend, sea salt, and baking powder to the processor. Process on low for 3 to 5 minutes, or until the dough is soft and stringy.
    • Let the dough rest for 10 to 15 minutes.
  2. Knead and Divide:
    • Dust a large cutting board with the gluten-free all-purpose flour.
    • Place the dough on the prepared surface and knead it a few times.
    • Divide the dough into eight equal portions.
  3. Roll Out the Tortillas:
    • Roll one portion into a ball and then roll it in the flour.
    • Using a rolling pin, roll out the dough into a thin, even disk about 8 inches (20 cm) in diameter.
  4. Cook the Tortillas:
    • Heat a large nonstick skillet over medium heat.
    • Place the tortilla on the hot skillet and cook for 2 to 3 minutes, or until the surface appears dry and bubbles form.
    • Flip the tortilla and cook for an additional 1 to 2 minutes, or until it puffs up.
    • Transfer the cooked tortilla to a kitchen towel-lined basket and cover with another kitchen towel to keep warm.
  5. Repeat:
    • Repeat steps 3 and 4 with the remaining dough, stacking the cooked tortillas in the towel-lined basket as you go.
