Ingredients:
- 2 cups fresh spinach (approx. 475 ml)
- ½ cup almond flour (approx. 120 ml)
- 5 tablespoons lemon juice (approx. 75 ml)
- 2½ cups gluten-free flour blend (approx. 600 ml)
- ¾ teaspoon sea salt (approx. 3.75 ml)
- 1 teaspoon regular or sodium-free baking powder (approx. 5 ml)
- ½ cup gluten-free flour, for dusting (approx. 120 ml)
Instructions:
- Prepare the Dough:
- In a food processor, combine the fresh spinach, almond flour, 2 tablespoons (30 ml) of lemon juice, and ¾ cup (180 ml) of water. Process until the mixture is creamy.
- Add the gluten-free flour blend, sea salt, and baking powder to the processor. Process on low for 3 to 5 minutes, or until the dough is soft and stringy.
- Let the dough rest for 10 to 15 minutes.
- Knead and Divide:
- Dust a large cutting board with the gluten-free all-purpose flour.
- Place the dough on the prepared surface and knead it a few times.
- Divide the dough into eight equal portions.
- Roll Out the Tortillas:
- Roll one portion into a ball and then roll it in the flour.
- Using a rolling pin, roll out the dough into a thin, even disk about 8 inches (20 cm) in diameter.
- Cook the Tortillas:
- Heat a large nonstick skillet over medium heat.
